passionfruit caramel. passionsfrucht karamell.



so soft
it melts in your mouth

so tangy
sweet and sour tango

so fruity
leaves your taste buds aching

who would have expected what lies inside this mere candy?

it looks like an ordinary caramel.
square, amber in color.
but one bite reveals a tangy taste and fruity flavors.

an ode to jaques genin and his mangue-passion.

it leaves to say:
a caramel does not have to be boring.

passionfruit caramel

210g sugar
60g glucose
125g butter
200g cream
1 tsp vanilla extract
pinch of salt

150ml passionfruit puree



add all ingredients except the puree into a heavy bottomed pan (i use a cast iron pan).
make sure the sides are high enough, or else your mixture might boil over.
set aside a cold water bath.
cook at medium heat while stirring to 125 degrees celcius.
for me, it took around 15 minutes.

be aware, it might take shorter or longer depending on you pan and your heat!

add the passionfruit puree and keep on stirring.
reheat to 117/118 degrees celcius.
when the temperature is reached, cool down in the water bath.
then pour into a prepared buttered pan or into silicon molds.
wait a couple of hours (even better is overnight!) until the caramel is set to cut.
wrap in backing paper.

keep in a cool, dry place to avoid crystallization.

sieht aus wie ein gewöhnliches karamell bonbon.
quadratisch, bernstein farbend.
bei einem biss entfaltet sich jedoch ein spritziger geschmack und fruchtige noten.

eine ode an jaques genin und sein mangue-passion karamell.

es bleibt zu bemerken:
ein karamell bonbon muss nicht langweilig sein.


passionsfrucht karamell

210g zucker
60g glukose
125g butter
200g sahne
1 tsp vanille extrakt
prise salz

150ml passionfrucht püree



füge alle zutaten bis auf das püree in einen schweren topf (ich benutze eine gusseiserne pfanne).
bevor du anfängst, stelle sicher dass der rand hoch genug ist, sonst kocht deine mischung möglicherweise über.
stelle ein kaltes wasserbad bereit.
koche bei mittlerer hitze unter ständigem rühren bis eine temperatur von 125 grad celsius erreicht ist.
bei mir hat das ca. 15 minuten gedauert.

sei vorsichtig, es könnte kürzer oder länger dauern, je nachdem was für ein topf du benutzt und wie die tatsächliche hitze ist!

füge das passionsfrucht püree hinzu und rühre weiter.
erhitze das karamell erneut bis 117/118 grad.
wenn diese temperatur erreicht ist, kühle das karamell in dem wasserbad runter.
giesse das karamell in eine vorbereitete gebutterte form (oder mit backpapier ausgelegt) oder in eine silikonform.
warte ein paar stunden, noch besser ist es übernacht, bis du das karamell rausstürzt und schneidest.
verpacke es in backpapier.

das karamell muss kühl und trocken gelagert werden, um kristallisation zu vermeiden.
